Dampen a clean piece of muslin cloth and wring out thoroughly. Wrap cheese and keep in your diary compartment. Unwrap once a week to allow cheese to breathe. Or use a special cheese container that lets it breathe without allowing condensation to build up.
Lettuce and other salad greens should be kept in your vegetable crisper. Store in a loosely sealed plastic bag or a special lettuce container, unwashed. Only wash leaves as you need them as storing them wet can make them slimy. Don't freeze lettuce as it breaks down and turns to mush.
Apart from some fruit and vegetables, all food in your fridge should always be covered. Good quality plastic storage containers with airtight seals are the ideal way to keep foods separate and stop strong odours from spreading. Never leave food in cans and always re-seal jars with their lids.
When it comes to defrosting food, don’t leave it out on the bench or in a sink full of water as harmful bacteria can grow quickly at room temperature. Frozen seafood, meat or poultry should be defrosted slowly in your fridge (or quickly in the microwave). Always ensure that food is completely defrosted before cooking it. Never re-freeze food that has been thawed.
